We loved every minute of Mark Sargeant’s Cookery Demonstration , which was the finale to our Science Themed Fortnight last Friday 8th July.
Mark, who runs Rocksalt Restaurant at Folkestone Harbour and worked for many years with Gordon Ramsay, talked to us a little about his career as a chef.
Mark showed us how to make Italian meringues, which he blow-torched to create a baked effect. He demonstrated how to Flambé cherries and we learned that it is a cooking procedure in which alcohol is added to a hot pan to create a burst of flames. It was very exciting and dramatic to watch in our school hall !
We had lots of questions for Mark and his answers were fascinating- so much relates back to the Science of what is actually going on – he has inspired a new generation of cooks here at Sandgate.
